It can be done up (like Joe has done here) or can be served easily with the sauce, noodles and Chicharron (pork rinds).

1 pouch Mama Sita’s Palabok Mix
3 cups water with pork broth cube
500g Rice Noodles for Palabok (follow the instructions on the package to prep the noodles)
2tbsp cooking oil
1 tbsp minced garlic
2 tbsp tinapa (smoked fish) flakes
1/4 lb pork boiled and cut into 1/2″ thick pieces
1 bunch bok choy cut into 1″ strips
2 hard boiled eggs, peeled and sliced
1/2 cup green onions chopped
1/4 lb cooked, peeled shrimp
1/4 cup tinapa (smoked fish)
6 cloves crushed and browned garlic
1/2 cup of pork rinds/chicharon, crushed
1-2 calamansi, squeezed.
1. Dissolve Mama Sita palabok mix with water and pork broth cube, bring to a boil, stirring until it begins to thicken. Turn off and set aside.
2. Soak palabok noodles in hot water for an hour, then cook it in boiling water until done (approximately half an hour), drain and set aside.
3. In a wok, sautee garlic, onion and tinapia flakes in oil. Stir pork until cooked and add bok choy last.
4. Put noodles on a serving platter with sauce.
5. Garnish with sauteed shrimps, garlic, flaked tinapia, chopped green onions, chicaron and sliced eggs.
6. Serve with freshly squeezed calamansi.
