Cassava Cake is a treat enjoyed all year around – it’s made best with freshly grated cassava but it might be hard to find so you can substitute with frozen grated cassava! INGREDIENTS:
6 cups grated cassava or 2 packs of frozen grated cassava
2 whole eggs
1- 1/2 cup sugar
1 can (400ml) coconut milk
1 can (370ml) evaporated milk (optional)
1/4 cup melted margarine
1/2 cup grated cheddar cheese (optional)

PROCEDURE:
1. Preheat oven to 350F.
2. Mix all ingredients together in a mixing bowl.

 3. Cook for 40 minutes, check the middle with a toothpick to see if it comes out clean.


4. You can also sprinkle grated cheddar cheese on the top.
