To start off this recipe, I’m using Samuel Adams’ Winter Lager. I bought both their Winter Lager and their Boston Ale but decided on the Winter Lager purely because of it’s limited availability and also it’s spice filled ingredient list. I’ve always been a fan of Winter made beers, most likely because they have a delicious taste that just is not found any other time of the year (although pumpkin beer comes close). A word of caution when it comes to beer selection for this particular recipe – if you go with a darker brew, your bread will be darker (and vice versa). My bread turned out a nice warm colour, so I didn’t mind at all!
Ingredients:
3 cups all purpose flour
1 tablespoon baking powder
1 teaspoon salt
3 tablespoons granulated sugar
1 1/4 cup shredded cheese (I used aged cheddar for mine)
1 12 ounce bottle of beer (I used Samuel Adams Winter Lager)
4 slices of bacon, cooked and chopped (1/4 c real bacon bits)
2 tablespoons butter, melted
Instructions:
1. Preheat oven to 350°.
2. Prepare bread pan by greasing with butter. Set aside.
3. In a large bowl, combine flour, baking powder, salt and sugar with a whisk.
4. Make a well in the center.
5. Add bacon, about 3/4 of cheese and full beer into the well.
6. Stir mixture with a spoon until combined. I found that my mixture was drier so I cracked open another bottle and added a little bit at a time until the bread batter was moist again.
7. Pour mixture into prepared bread pan. Add remaining cheese. Drizzle with 1 tablespoon of butter. Bake for 30 minutes.
8. Remove from oven and drizzle remaining butter over the top.
9. Bake for an additional 25-30 minutes or until browned on top and loaf thumps when you tap the top.
10. Remove to a wire rack and allow to cool for 5 minutes. Remove from pan and allow to cool on wire rack. You can brush with more butter if you choose.
This Bacon Cheddar Beer bread is delicious – its crispy and cheesy on the top, and very moist with a great taste of beer to the bread. It’s dense and slightly salty from the cheese and bacon, but all in all very good. I’d eat this on it’s own or serve it with some sliced ham.
I think the next time I make this, I will actually go and purchase a bread pan, as my pan over flowed. But it still turned out really well and tastes delicious!
