I’m a huge fan of guacamole – it’s easy, delicious and…I don’t feel so bad eating a lot of it. For the most part, I don’t have a defined recipe and when I don’t have certain items, I just do without them – except obviously the avocados, those are most important!
Without further ado, the recipe.
Makes 4 servings
3-4 avocados, mashed
1 lime, juiced
1/4 large purple onion, diced
half a bunch cilantro, chopped
2 tomatoes, diced (optional)
3 cloves garlic, minced
salt + pepper to taste
1. In a bowl, mash the avocados with lime juice, purple onions, cilantro, tomatoes, garlic, salt and pepper.
Easy right? Switch up the proportions for cilantro, tomatoes, garlic and onion depending on your taste. I love cilantro and onions, so I usually add a little more than usual.
