We were invited to submit a unique recipe with Catelli’s Gluten Free Pasta for a contest and so I turned to my dad and asked him if we could make one of our family recipes – but brighten it up a bit with healthier options. Filipino food is normally not very healthy at all, for the most part I like switching up my meats in our recipes (pork to chicken for example) or using less soy sauce or reduced sodium soy sauce.

Catelli’s Gluten Free Pasta is made from a unique four-grain blend of white rice, brown rice, corn and quinoa – right now it’s available in four different types of pasta: spaghetti, fusilli, penne and macaroni. It’s a perfect option for those who have gluten sensitivities.

In any case, my dad and I updated one of his favourite, easy to make recipes and we wanted to share it with you! Normally this is called “Pancit Bihon” (pun-sit bee-hon) which is literally stir fry noodles, Filipino style! I decided that if my dad and I win the Catelli contest, I’m going to take him to Hawaii for his 70th birthday next year! Check out the recipe below!

Ingredients
1 carrot, julienned
1 small onion, sliced
4-5 cloves of garlic, crushed
1 stalk celery, julienned
8-10 Chinese Snow Peas, cut in halves
4 medium mushrooms, sliced
1 bunch green onion chopped into 3” parts
1/4 of a cabbage, chopped
1 chicken breast, sliced lengthwise
12 medium sized shrimp, cooked
3 tablespoon of oil (for cooking)
2 boxes of Catelli’s Gluten Free Spaghetti, cooked for 7 minutes

Sauce
1 lemon, cut into half for juicing
3 oz soy sauce*
2 oz oyster sauce*
black pepper to taste
*Gluten Free choices are available for those who are celiac or gluten intolerant.

Procedure

  1. Sautee garlic and onion in a large pan.
  2. Add chicken and shrimp, cook thoroughly.
  3. Add vegetables and stir fry until just cooked.
  4. Add the cooked Catelli’s Gluten Free Spaghetti noodles to the pan.
  5. Add soy sauce, oyster sauce, black pepper and lemon. Stir until combined.
  6. Serve hot!
