I’m going to have to admit that out of all the cheese I’ve tasted, I haven’t found a blue cheese that I’ve completely enjoyed. But I’m optimistic the more I get exposed to different types because I feel that much in the same way that I originally felt about whiskey and gin, my tastes will mature and I will grow a better understanding and appreciation for more cheese.

One blue cheese that I was surprised with is That Dutchman’s Farm’s Dragon’s Breath, which was sent to me for the month of May as part of my ongoing ambassadorship with Dairy Farmers of Canada (and yes, this post is sponsored). This cheese is not as pungent as others I’ve experienced before and doesn’t have the blue/green marbling you would find in certain blue cheeses. Dragon’s Breath hails from Nova Scotia and was created by cheese maker Willem Van Den Hoek in 2002.

Most people (like myself) have difficulties using blue cheese in recipes, but I find it’s best use is either being served on a cheeseboard with sweet spreads or crumbled onto salads or sandwiches.

Which brings me to a super simple recipe I’m sharing with you today. In a bid to balance out all the fried food I’ve been eating recently, I thought I’d share a sandwich recipe that I make for myself for lunch or when I need a snack to get me through the afternoon.


Dragon’s Breath, Pear and Proscuitto Open Faced Sandwich 

Serves 2 (or 1 hungry person) 


¼ package, Dragon’s Breath blue cheese, crumbled
4-8 slices of prosciutto, thinly sliced
1 ripe pear, thinly sliced (I used Anjou here, but try it with Asian pear!)
2 cups of Spring Mix
2 tablespoons white wine vinegar
1 tablespoon olive oil
ground black pepper to taste
4 slices of multigrain bread, toasted
1 tablespoon of butter



  1. Toast your bread and spread butter on all four slices.
  2. In a bowl, add Spring Mix, white wine vinegar, olive oil and black pepper and mix. Let sit for a minute.
  3. Add a generous amount of the salad mix to each bread slice.
  4. Add 1-2 slices of prosciutto on top of the salad mix.
  5. Add 3-4 slices of pear to the top of the prosciutto.
  6. Sprinkle Dragon’s Breath blue cheese to the top of your sandwich.
  7. Add fresh ground pepper to the top to your taste.
  8. Enjoy!

When I made this with the Dragon’s Breath blue cheese, I ended up eating it for lunch and dinner. Like I mentioned earlier, it’s so difficult to find a great blue cheese and Dragon’s Breath is enjoyable.
