As you could probably tell by now, I love easy recipes. The easier, the quicker – the better. This is one of my go-to recipes when I’m feeling lazy. My dad, Papa Gastro was the one who taught me this recipe. I hope he doesn’t mind me sharing! I don’t steam the bok choy because 1) it takes too much of the nutrients out of it and 2) it gets kind of steamed in the wok/frying pan.
Ingredients:
2-3 Cloves of Garlic
One small-medium onion, diced
Lean Ground Beef (or substitute for a leaner meat if you’d like)
4-6 Baby Bok Choy OR One Bok Choy – chopped into one-two inch pieces (see below)
Instructions:
1) In a wok (or a large frying pan) – heat some oil.
2) When the oil is heated, add garlic and onions. Sautee.
3) Add ground beef, cook and season with pepper.
4) When the ground beef is cooked, add the bok choy. You may cover the wok/pan to ‘steam’ your vegetables, but do not over cook!
5) Best served with hot rice.
