That being said, I still find this recipe easy, but it’s because most of the ingredients are readily available in my freezer/fridge. Prep takes about 5 minutes and cooking doesn’t take more than 10 minutes.
Here’s what you’ll need:
Day old rice (2-3 cups)
Cloves of garlic (as many to your liking)
Half an onion
1/2 cup of frozen vegetables (or substitute with fresh vegetables like carrots, peas, mushrooms, etc)
2 x Chinese sausage (or whatever meat you may have left over)
2 eggs
Salt (optional)
Soy sauce (optional)
Green onions (optional)
The first thing I do is boil my frozen vegetables for about 5 minutes (as directed on the package). While that’s boiling, I chop the garlic, onion and chinese sausage.
Saute the onions and garlic for 1-2 minutes on medium heat.
Add the chinese sausage into the mix and cook for 2-3 minutes.
Add the rice and cook for about 5 minutes. Depending on how ‘fresh’ your rice is, it might get sticky if its still too fresh to cook. Make a well in the middle…
..…for the Eggs! Crack the eggs right in and scramble in the middle. Or, you can scramble them separately and add them to the rice if you like.
Take the vegetables, strain them and toss them in. Season with salt or soy sauce or leave it plain. Depending on who I’m cooking for will change my seasoning techniques.
You can garnish your fried rice with green onions if you have them. Bon appetite!
