As a rookie baker, I’m always happy to come across recipes that are easy and tasty. I was given over a pound of blueberries and I had no idea what to do with them. Naturally I perused the inter webs to help me find out what I could do with them. I was on my way to a BBQ, so I thought I would make a nice treat with them and found this Blueberry Crumb Bar Recipe off Unruly Bliss (which is a recipe originating from SmittenKitchen and AllRecipes.com).

Ingredients
1 cup white sugar
1 teaspoon baking powder
3 cups all-purpose flour
1 cup cold, unsalted butter
1 egg
1/4 teaspoon salt
zest and juice of 1 lemon
4 cups fresh blueberries
1/2 cup white sugar
4 teaspoons cornstarch

Directions
1. Preheat your oven to 375 degrees F.
2. Grease a 9×13 inch pan.

SONY DSC 3. In a medium bowl, stir together 1 cup of sugar, 3 cups of flour, and baking powder. Mix in the salt and lemon zest, then use a fork or pastry cutter to blend in the butter and egg. {The dough will be crumbly.}

SONY DSC 4. Pat half of the dough into the prepared pan.

SONY DSC 5. In another bowl, stir together the sugar, cornstarch, and lemon juice, then gently mix in the blueberries.

SONY DSC 6. Sprinkle the blueberry mixture evenly over the crust then crumble the remaining dough over the berry layer.

SONY DSC 7. Bake for 45 minutes, or until the top is slightly brown.

8. Cool the bars completely before cutting into squares.

My Blueberry Crumb Bars were good, they were nice and light without being overly sweet or lemony. I added more lemon to my recipe, hoping to have a bit of that clean, citrusy taste to it, but noticed it didn’t do much as the blueberries were the main attraction. I think I might’ve over done it on the top, so make sure you have more crust than crumble when you bake these!
