By the way – bacon always makes a great side for these delicious dishes (try turkey bacon if you’re trying to stay healthy, it’s just as tasty!). I don’t fry bacon, I put them on a flat cookie sheet and throw them into the oven. Turn the oven on to 400F and leave it for about 15-20 minutes (depending on how crispy you like your bacon). It gives you plenty of time to make the other dishes.
I’m going to start off with the omelettes as the other two are kind of an ‘instant’ meal.
Omelette Recipe
4-6 eggs, beaten
salt and pepper to taste
Mushroom Cheddar Garlic:
4-5 small button mushrooms or any mushrooms will do
1/3 cup of cheddar, shredded
2-4 cloves of garlic chopped
Ham and Cheese:
3-4 slices of ham, diced
1/2 cup of cheese
In a large frying pan (with a little bit of oil), pour in the beaten egg mixture. Add all ingredients immediately after (or even better, throw them into the egg mixture before pouring into the pan).
Cook evenly on both sides so that all the egg is cooked and cheese is melted.
Waffles and Fruits
I bought these waffles from SuperStore, they sometimes have them, but when they do I stock up. Belgian Waffles are easy to toast and then serve with a sliced banana or some strawberries, whatever fruits you have on hand. Either serve with some light whipped cream or with some maple syrup (or try coconut syrup! Delicious!)
Macademia Nut Chocolate Pancakes
Okay, so my parents brought this great pack back for me from their trip to Hawaii. I literally added water and these are the most delicious insta-pancake mix I’ve ever had. It’s going to be on my to-buy list when I’m back in October! I don’t think it’s available here, but I may be wrong! Sorry for being a tease, but it was just so great, I had to share!
