L’Éclair de Génie is a Parisian pastry shop that has made it’s way to the West Coast of Canada. Renowned Chef Christophe Adam has spent the last 14 years honing the most beautiful eclairs, a French pastry made with choux and cream on the inside at it’s core.
I had the opportunity to check out the space the day before it opened and it’s a wonderfully chic boutique that offers more than just eclairs – there are other confectionary items and a full espresso bar. The space is bright and the perfect addition to the iconic Robson street.
The eclairs range in price from $5-$8, but I can assure you that each one is made with so much love and art, that it’s worth the price tag.
My absolute favourite was the N 177 – CSB – Caramel Beurre Sale (or Caramel Salted Butter).
What I loved about all the flavours was that they had a wonderful flavour to them without being too sweet or too much of one particular flavour. Even the yuzu flavoured one had a nice brightness to it without being too overwhelming. Every bite had a nice crispy texture from the choux and the creamy and smooth goodness of the flavoured cream that was perfect in weight. The beautiful tops of these eclairs are quite literally the cherry on top – showcasing the details that go into every single eclair.
L’Éclair de Génie has over 25 boutiques around the world, but this is the first North American store – I couldn’t think of a better location! I hope you’ll get to check it out soon!
