On my meal-kit adventures, I got to try Vegano this week. They’re 100% plant-based meal kits, that offers a menu of chef-created recipes using farm-fresh and local ingredients. The selling points for me in trying were that they use everything in their kitchen that’s left over for soups and sauces and they support local farmers.
My first recipe to cook was the Roasted Vegetable Tahini Quinoa Bowl. This was my second favourite dish in the box. I appreciate that the recipe is accessed via QR code than receiving a paper recipe card. My favourite part of this medley of brussel sprouts, sweet potatoes, red and white quinoa, parsley, mint, avocado and tahini garlic sauce was the crispy chickpeas that went on top. I need to make my own fried chickpeas to dress everything with!
My second recipe to cook was Butternut Squash And Black Bean Tacos. These were my favourite recipe out of the box. I always add butternut squash to everything if I can like my tortilla soup, so I just loved the soft, spiced yumminess of the squash in this taco. The corn tortillas were also delicious – however they were folded in the bag, which made them fall apart! (Which I’ve hidden by toppings in the photo!) The Vegano Cilantro Lime Cashew Crema was sweet and light, a nice touch to the whole dish.
The last recipe was Sticky Tofu Rice with Roasted Broccoli. This was probably my least favourite, only because I can make something like this at home quite easily. The Vegano Sticky Tofu Marinade and Furikake were both delicious touches to this simple dish.
