Maybe it’s the fact that I’ve still got Hawaii on my mind or maybe I want something refreshing to munch on, but my go to snack recipes have definitely been some sort of variation of salsa. I love making pineapple or mango salsa, but you can honestly substitute with a variety of different fruits. The recipe is super simple and that’s why I love it.
Recipe
1 half of a pineapple, chopped into smaller cubes (if you can’t get fresh pineapple, you can use canned pineapple as well)
1 small purple onion diced
1 large tomato diced
5-7 stems of cilantro, chopped
1 lime’s worth of juice
1 jalapeno (stem, ribs and seed removed), chopped – OPTIONAL
salt and pepper to taste
Instructions
1. Combine all ingredients, mix well.
