Recently, we had dinner with a couple of friends at Fable. A little bit of back story – Chef Trevor Bird imagined providing an experience of farm to table dining, thus Fable was born. Utilizing the best of local ingredients and Trevor’s talent to fuse great flavours together, Fable prepares all food from scratch daily.

For starters, I ordered the Canned Tuna and Brian ordered the Spaghetti and Meat Ball.

The Canned Tuna ($12) was interesting, when it arrived I thought the tuna would be cold (a la sashimi) but it was served warmed as it is cooked sous vide along with some potatoes and olive oil.

With the Spaghetti and Meat Ball ($11), let’s be real, we should call this the Duck Meat Ball (with tagliatelle). Why? Because the duck meat ball is definitely the star of this dish with it’s moist, tender flavour sitting lovely in a parmesan foam.

One of our friends ordered the Chickpea Fritters ($9) – one of my favourites and go-to menu items when at Fable.

Our friends ordered the Ling Cod with lentil ragout, chorizo, celeriac puree ($26) and the Wild BC Salmon with carrot puree, kale and sun chokes ($24).

Brian ordered the Potato Crusted Chicken served with caramelized carrots, onions and parsnip puree ($23). I loved the way it was presented and I am also a huge fan of anything fried beautifully like this.

For my main dish, I ordered the Smoked Duck Breast served in brown butter hollandaise, crispy brussel sprouts and croutons ($26). This is by far my favourite dish of the entire meal, and I have to say it trumped all other dishes on our table (sorry guys!). This beautiful skillet is packed with great flavour that woke up the brussels and croutons without overpowering the juicy and tender, delicate taste of the smoked duck breast. I am in love with this dish, I know it’s not very adventurous to say, but this will definitely be my go-to dish whenever I visit Fable from now on.
