I’ve always been apprehensive cooking udon because it always sticks together, so I must be doing something wrong. Anyway, I went on the interwebs and found out that I must’ve been a) boiling it for too long or b) not adding water to my wok.
You’ll need:
2 packets of Udon
Cooked chicken breast (1 or 2) or any kind of meat
3-4 small Mushrooms
Broccoli
(or any kind of vegetables, work with what you have in your fridge)
Olive Oil/Canola Oil
1/2 of an Onion
2 cloves of Garlic
Hoisin Sauce (optional)
Oyster Sauce
Soy Sauce
White Pepper (optional)
Sesame Oil
When I made the recipe, I didn’t have hoisin sauce or white pepper so, it can be made without it.
Boil the udon for 2-3 minutes ONLY. Drain and keep it in your strainer.
Heat up your wok with the oil and toss the garlic and onion in. Add vegetables and cook for a minute or so. Add the meat and cook for another minute. Add udon, make sure that it doesn’t stick together – so use a bit of water if you need to keep them from sticking together.
Add oyster sauce and soy sauce to your liking, I also added regular black pepper since I didn’t have white pepper. Add sesame oil last and toss for another minute or so and you’re done!
