An easy meal that my dad has taught me how to make is a tuna salad sandwich. This is a great, healthy alternative for lunch, or you can even have it with delicious SkyFlakes crackers to cut the calories from the bread!

This recipe will make 6 big sandwiches.

You’ll Need:
1 small onion or half a regular sized onion
2 sticks of celery
2 cans of lightly flaked tuna
pepper and salt to taste
1/2 cup of mayonnaise or mayonnaise-type dressing (you know, the fake mayo)
Hot sauce (optional)
Relish (optional)

Dice the onion and celery and toss them into a bowl. Add the tuna (make sure to drain the liquid from the can) and crush the chunks of tuna until they’re small and mix well with the vegetables. Add mayonnaise to desired creaminess and add pepper and salt. Mix all ingredients together.

You may use hot sauce to kick it up a notch or relish to sweeten the taste.

I like serving Tuna Salad sandwiches with sliced cucumbers or alfalfa sprouts with very lightly toasted bread and either salad on the side or some oven roasted chips.

Bon appetite!
