One of my favourite things growing up was definitely going to the beach and having a BBQ with my family. Now that the weather is getting better, it’s time to light up the grill and get back to grilled dinners!

Recently, it was Brian and Albert’s birthday and we thought we’d have a laid back BBQ. I consulted my dad for his bbq recipe that people seem to enjoy and that is tried, tested and true. And while he offered to do it for me – I figured I should learn how to do it on my own. When my dad handed over the recipe this is what it looked like:

Yep, no measurements. But I figure most good chefs don’t really measure anything out, they just toss things in and add a little more if needed. So, I decided I would do the same and kind of eyeball everything out. But thankfully, I’m not leaving you with a recipe like this, but more of a guideline you can follow. Depending on your taste, you may want to add more chillies for more heat or maybe add more sugar if you want a sweeter tasting BBQ. It’s all up to you! But without further ado, here is my family’s bbq marinade:

De Los Santos Family Style BBQ Marinade:
4-5lbs of pork shoulder (with bone in), or you can use chicken, beef.
1 tsp pepper
1 tsp sea salt
1/2 cup soy
1/2 can of 7UP
1/2 cup brown sugar
5 tbsp ketchup
3-5 heads of garlic, chopped
2 thai chillies, chopped (this recipe is fairly mild, use 3-4 to get a medium level)
1 Magic Sarap package (OPTIONAL)

1. Chop up your meat into smaller portions for skewers.

2. In a large bowl, add your meat and other ingredients and mix well.

3. Marinate for at least an hour (ideally, overnight).

4. Put meat on skewers and bbq until cooked.

5. Enjoy!
